Southside has a New Executive Chef – Introducing Craig Geddes

Originally trained in a restaurant quality, French provincial style of cooking, Craig Geddes began his career in Melbourne over 20 years ago. The restaurant, Craig served his apprenticeship in, only allowed the staff to speak French, cook French and even place orders in French. This may sound strict but this discipline allows chefs to walk into any kitchen in the world and understand what is required of them or to be understood by those chefs that may not share the same language base as themselves. Craig benefited from this process by allowing him to develop further skills from the influence of the international chefs that worked in the restaurant. Skills Craig, later in his career, used to win his first ‘Chef’s Hat’, and as a testimony to those skills Craig was able to maintain that ‘Chef’s Hat’ rating for the remaining two years of his employment. Craig moved to Brisbane in 1998, where his stellar career has continued. One of the restaurants in his charge was voted in the ‘Top 10 restaurants of the Millennium’. Craig has worked for top Brisbane restaurants such as the Breakfast Creek Wharf Restaurant, the GB’s Seafood Restaurant and has been the inside Executive Chef for ANZ Stadium on game days where he was responsible over 120 staff for delivering up to 3,500 meals to the; general public, members, management, media, special guests, dignitaries, and of course the players in the various dining areas throughout the stadium. After this hectic lifestyle Craig found himself involved with various Cafés throughout Springhill, renovating, relaunching, and then moving on to the next. Craig was also involved, along with a group of Chefs, in the “Loaves & Fishes” project to fundraise for the completion of the final stage of construction of St John’s Cathedral in Brisbane. The “Loaves & Fishes” project served a luncheon to 500 people under a marque, the annual event is often attended by people such as John Howard or Peter Beattie. Eventually Craig discovered Clubs and was in charge of catering in Premium Clubs such as Arana and the award winning Brothers Leagues Club in Ipswich. Craig is looking forward to his time here at Southside and if there is one thing he would like to impress upon Southside members, guests and visitors, is that he is entirely approachable. So when you see him around the Club, don’t be afraid to wander up to him and have a chat.

St. Paddy’s Day

On Sunday March 17th Southside Sport & Community Club will be ‘getting its green on’ and celebrating the luckiest day of the year. To be sure, to be sure, to be sure! Ryebuck will be kicking off proceedings from midday, where they will entertain you with a great array of contemporary music with a few Irish numbers they have picked up from playing in Irish clubs and pubs around Brisbane. Roast Casual Dining Restaurant will be running Irish specials such as Guinness pies and so forth. Eat Café are getting into the spirit with some scrumptious delights! One word to give a hint on what those delights will be ‘Baileys’ (no need to say anymore). To top the day off Southside will be giving away multiple “Pots of Gold” coins, draws will commence from 4.30pm. What a great way for the Club to finish off St. Patrick’s Day. So dig out your Irish best and head on down to Southside. We hope to see you here!

Mad March Mayhem

Southside is giving away $8500 this month in our major promotion! Beginning from 1st March 2013, club members will begin generating tickets into our ’Mad March Mayhem’ promotion just by using their card throughout the club! Preliminary draws will be conducted on the following dates, with three contestants chosen from the Major Promotions barrel and one contestant chosen from the Direct Mail barrel on each occasion:
• Monday 4th March from 6.30pm
• Monday 11th March from 6.30pm
• Monday 18th March from 6.30pm
• Sunday 24th March from 5.30pm
Then, following the final draw on Sunday 24th March, a game will be played to determine the winners of cash prizes of 1 x $4000, 1 x $2000, 1 x $1000 and 3 x $500! So make sure you come on down & use your membership card when visiting the club for your chance to share in the cash!
